A washed micro-lot from Edward Sandoval, grown near 1,850 metres in Ibagué, Tolima and sourced in partnership with Pergamino. Edward spent years with Colombia's National Federation of Coffee Growers before striking out to plant his own exotic varieties — and the Chiroso is the star of the show. Prized for its bright acidity and delicate florality, this lot leans citrusy and clean: grapefruit and prune sweetness around a light minerality and a tea-like tactile.
A quietly complex filter coffee that rewards a careful pour.
