Ratnagiri Hemavathi by Hex Coffee

Ashok and Divya Patre run Ratnagiri Estate in Chikmagalur, founded by Ashok’s grandfather in 1927, and they treat fermentation like lab work — the farm has its own bioprocessing set-up. This Hemavathi lot ferments for 48 hours in sealed tanks with a DIV52 culture, then goes through a ‘vacuum shock’ that pulls the fermented juice back into the cherry. White blossom and almond paste with a raspberry finish — an Indian coffee unlike anything else on the shelf.
