Finca El Paraíso is where Diego Bermudez rewrote what coffee processing can do — so convincingly that he was once accused of adding flavour, which remains the best compliment the industry knows how to give. His brother Daniel runs the farm now, and has spent recent years refining the thermal shock protocol this Castillo goes through.
The short version: the coffee ferments under pressure with the farm's own yeasted biomass, the tank is warmed slowly and then dropped cold. What comes out tastes of lychee gummies and fruit cocktail, with white flowers on the nose and a black tea body. Heavy on fruit, light on funk.
