Smallholder coffees from Santa Maria and Pitalito in Huila, cupped again and again before they’re blended, then decaffeinated by Descafecol in Manizales with sugarcane-derived ethyl acetate. At least 97% of the caffeine goes and the fruit stays: raspberry, nougat and lemon curd, with nothing that tastes like a compromise.
