A blackberry co-ferment with the volume turned up. Luz Angela's Caturra is oxidised in barrels, then submerged and fermented with real blackberries before a slow 76-hour dry. Complex as it evolves, yet endlessly drinkable — fresh blackberry, honeysuckle and sweet grape. An all-night jam session in a bag.
