Turn distilled water into ideal brewing water. The Classic profile dials in the magnesium, calcium and bicarbonate that make light and medium roasts taste the way the roaster intended — clearer acidity, more defined fruit, none of the flatness that hard or over-filtered water brings.
This is the one to start with if you are brewing our Onyx, Sey or La Cabra lots on a pour-over or drip machine.
How it works. Start with distilled or reverse-osmosis water, drop in one stick, shake, and brew. Nothing to measure, nothing to guess at — you get the same water chemistry every single time.
Minerals: magnesium sulfate, calcium citrate and potassium bicarbonate. Formulated to the Specialty Coffee Association's water standard.
Why it matters in Bermuda. Coffee is about 98% water, and tank water varies house to house. If you have ever wondered why a bag tastes different here than it did at the roaster, this is usually why.
