Prodigal
A just-landed chiroso from menu favourite Jorge Rojas, grown at Finca El Jardín in Tolima, one of his four farms. The cherries were floated, pulped and fermented without water for just 16 hours, then fully washed and dried on marquesinas. A fun, fruit-punch cup: big blackberry and mandarin orange with a ripe, saturated quality.
A limited lot. Once it's gone, it's gone.
