Costa Rica Las Lajas Natural by Onyx Coffee Lab

The Chacón family at Las Lajas were among the first in Costa Rica to commit properly to natural processing, back when leaving cherries whole on the drying beds was still considered a risk worth arguing about. Onyx have bought from them for years, and this lot is now dried to a profile the two of them worked out together.

Pineapple and blueberry lead, hibiscus runs through the middle, and a soft milk chocolate sweetness holds the whole thing steady. Bright, but never sharp — a natural for people who think they don't like naturals.
