Lush green coffee farm hillside at origin

How We Choose Our Roasters | Harbour Roast Coffee

We get asked this question a lot: "Why these roasters?" It's a fair question. Coffee sourcing is the foundation of everything we do, and on a small island like Bermuda — with limited shelf space and high shipping costs — every bag we import has to earn its place. So how do we decide which roasters deserve a spot in our lineup?

The short answer is that we look for roasters who are as obsessive about quality as we are about getting great coffee to Bermuda. The longer answer involves sourcing ethics, roast quality, consistency, and a shared belief that specialty coffee should be accessible without being dumbed down.

Here's what goes into every partnership decision at Harbour Roast Coffee.

It Starts with the Green Coffee

The most important thing any roaster does happens long before the roasting machine fires up. It happens at origin — on farms in Ethiopia, Colombia, Guatemala, Kenya, and beyond — where green (unroasted) coffee is grown, harvested, and processed.

We partner with roasters who have direct, long-term relationships with the farmers and cooperatives who grow their coffee. This isn't just a nice marketing story — it has tangible effects on quality. When a roaster visits the same farm year after year, the farmer understands what the roaster is looking for. They can experiment with processing methods, select their best lots, and invest in their land because they know there's a buyer who values what they produce.

Sey Coffee, for example, is renowned for its sourcing transparency. They publish detailed information about every lot they buy — the farm, the producer, the altitude, the processing method, and what they paid. That level of openness is a signal that a roaster takes sourcing seriously, not just as a supply chain function but as a commitment to the people who make specialty coffee possible.

Sustainability That's More Than a Label

"Sustainable" and "ethical" are words that get thrown around loosely in the coffee industry. Certifications like Fair Trade and Rainforest Alliance are a good baseline, but the roasters we work with go further. They pay premiums above market rate — often significantly above Fair Trade minimums — because quality coffee costs more to produce and the people who produce it deserve fair compensation.

Onyx Coffee Lab publishes their green coffee purchase prices for every lot. Intelligentsia pioneered the direct-trade model over two decades ago, setting the standard for transparent, equitable sourcing relationships. These aren't feel-good marketing moves — they're structural commitments that shape how each company operates.

When you buy coffee through Harbour Roast, you're participating in a supply chain where every link — from the farmer to the roaster to us to you — is built on fairness and quality. We think that matters, and we know many of our customers in Bermuda feel the same way.

Roast Quality and Consistency

Great green coffee is only half the equation. Roasting is where potential becomes flavour — and it's surprisingly easy to get wrong. Under-roast and the coffee tastes grassy and sour. Over-roast and you lose all the delicate origin character under a blanket of char and smoke.

We look for roasters with a proven track record of roast quality — companies with experienced roasting teams, data-driven profiling, and quality control systems that ensure every batch meets their standards. Our partners don't apply a generic roast curve to every bean. Each lot is profiled individually, with roast development calibrated to highlight the specific qualities of that coffee.

Consistency matters especially for our B2B partners in Bermuda — hotels, cafés, and restaurants that need their coffee to taste great every single day, not just when a roaster happens to nail a particular batch. The roasters in our portfolio deliver that reliability.

Range and Versatility

Bermuda's coffee drinkers have diverse tastes, and our roaster lineup reflects that. We intentionally work with roasters who bring different strengths:

Sey Coffee offers light, expressive roasts that let the natural character of each origin shine. Their coffees tend toward florals, stone fruit, and tea-like qualities — perfect for adventurous drinkers and pour-over enthusiasts.

Hex Coffee brings clean, balanced seasonal offerings from Charlotte, North Carolina. Their coffees are approachable but never boring — a great entry point for people exploring specialty coffee for the first time.

Onyx Coffee Lab spans the spectrum from competition-level experimental lots to crowd-pleasing espresso blends. Their range lets us offer something for every palate and every brew method.

Intelligentsia brings decades of experience, a deep catalogue, and dependable core blends alongside rotating seasonal features. They're a cornerstone — reliable, versatile, and always excellent.

Together, these roasters give us a portfolio that can serve a home brewer who wants a single bag to try, a hotel that needs a consistent espresso blend for their restaurant, or a café looking to feature something special.

Our Commitment to Bermuda

Harbour Roast exists because we believe Bermuda deserves the same quality of specialty coffee that people in New York, London, and Melbourne take for granted. Our roaster partnerships are the foundation of that mission. We're not a generic import company — we're curators, choosing the best and making it available on an island that hasn't had easy access to coffee at this level before.

As we grow, we're actively expanding our roster. We're in conversations with roasters across North America and internationally, always looking for partners who share our standards. The goal isn't to carry everything — it's to carry the best.
